Nargisi Puri
Puri stuffed with egg and potato mixture
Ingredients
1 1/2 cup wheat flour
2 eggs ,Boiled, peeled &
mashed
2 potatoes Boiled, peeled &
mashed
1 tbsp. of Mint leaves OR
coriander leaves, finely chopped
1 Green chili, finely chopped
2 tbsp.. of Oil
Warm water for kneading the
dough
Oil for deep frying
Salt according to taste
Advice
Do not roll the puri too thin
orelse the stuffing will come out
Serve with

Method
1. Knead together
mashed eggs, potatoes, coriander leaves, chili and salt and divide into
equal portions.
2. Sieve flour and 1 tsp. salt, rub 2 tbsp. oil and mix well for 10
-15 mins.
3. Slowly add warm water and knead into a soft dough and divide
into equal balls.
4. Roll out each ball a little and place one portion of the egg
mixture in the center of each round.
5. Fold it over and secure the ends and now roll out each ball into
a small disc shaped puri.
6. Heat oil in a pan, deep fry one puri at a time until the color
turns golden. Serve hot.
