Aloo - matter patties
Potato patties with green pea filling
Ingredients
500 GMS OR 1LB boiled, peeled
& mashed potatoes
1/2 cup cornflour
1/2 cup rice flour
Salt according to taste
For the filling:
1/2 cup blanched frozen green
peas
3 tsp. chopped onions
5 tbsp. oil
1/2 tsp. cumin seeds oil
1/2 tsp. chili powder
1/2 tsp. coriander powder
1/2 tsp. garam masala powder
1 tsp. finely chopped green
chilies
1 tsp. julienned ginger
A handful of chopped coriander
leaves
Salt according to taste
Advice
If you wish you can deep fry
the patties.
Serve with
Serve hot with mint chutney.
Method
1. Mix cornflour, rice
flour and salt to the mashed potatoes and mix well.
For the filling:
1.Heat a little oil and
season with cumin seeds.
2.When they crackle, add onions & green peas sauté them for 5- 10
minutes and then add all the remaining ingredients. Cook for a while and
remove from heat.
For patties:
1. Divide the mashed
potato into lemon sized portions.
2.Roll into cup shapes and put a little green pea filling into
each. Close the cups and shape into patties.
3.Cook them in little oil on a hot tava (griddle) over medium heat
till brown.
