Khaman Dhokla
A fermented sweet-sour Gujarati snack
Ingredients
4 cups of Chana (bengal gram
dal) Dal
1 cup Rice
1/4 cup of Urad (Moong dal
washed) Dal
2 tbsp.of Sour curd
A big pinch of Baking soda
1 tsp. Sugar
1/2 tsp. turmeric powder
1/2 tsp. Red chili powder
Salt according to taste
For frying:
2 tbsp. of oil
1 tsp. Mustard seeds
4 green chilies sliced
4 tbsp.. Coconut, grated
A handful of chopped Coriander
leaves
Advice
For making Khaman Dhokla for
any party or social gathering you have to start a day in advance.
Serve with
Green chutney
Method
1.Wash and soak both
the dals and rice separately for 8 hours.
2.Drain and grind them coarsely and mix the curds & soda.
3.Add enough hot water to form a batter and keep this mixture
overnight.
4.Next morning mix the salt, chili powder, sugar and turmeric
powder.
5.Pour this mixture in a lightly greased thali and steam till firm.
6.When cold cut into pieces and keep aside.
7.Heat oil in a pan add the mustard seeds & sliced green chilies.
8.When the seeds starts to sputter add the Khaman Dhokla and
sprinkle grated coconut and coriander leaves and serve hot.
