Khasta Kachori
Crisp kachooris stuffed with lentils and
spices
Ingredients
200 GMS urad (moong dal
washed) dal
200 GMS maida
250 GMS ghee (clarified
butter) or refine oil
3 or 4 green chilies chopped
One small piece ginger chopped
1 tsp. coriander seeds crushed
1 tsp. aniseeds (saunf)
Salt and chilly powder
according to taste
1/2 tsp. garam masala powder
Serve with
Serve with sauce or chutney.
Method
1.Soak urad dal
overnight.
2.Strain and spread the dal on thin cloth in shade, the next
morning, till dry.
3.Heat 1 tbsp. Ghee(clarified butter) in a pan and fry the dal till
pink.
4.Add the spices, salt and green chilies. Mix well.
5.Knead the maida (all purpose flour, plain flour) with a pinch of
salt, a tbsp. of warm Ghee(clarified butter) and little water to make a
stiff dough.
6.Roll small-sized puris and fill a spoon of urad dal mixture to
make balls.
7.Let them dry for sometime.
8.Then deep fry the kachooris until crisp and golden brown on slow
heat.
