Moong dal Kachoori
Stuffed split green dal snacks
Ingredients
For Covering:
100 GMS Refined flour
1/4 tsp. Soda Bicarbonate
50 GMS Semolina
2 tbsp. Ghee
1 tsp. Salt
Water (to knead the dough)
Oil For frying
For Filling: 225 GMS soaked
Split Green Gram
1 tsp. grated Ginger
1 cup Coriander leaves
3-4 chopped Green chilies
1/2 tsp. Asafoetida
1/2 tsp. Coriander-cumin
powder
3 tbsp. Ghee
1/4 cup grated Coconut
1 1/2 tsp. Chili powder
3/4 tsp. Turmeric powder
2 Lime
1 tsp. Sugar
Salt To taste
Serve with
Serve hot with tangy
Mint/green chutney or tomato ketchup.
Method
1.First grind the split
green gram coarsely in circular grinding stone to whip in some air.
2.Now Sieve the refined flour and set aside.
For Filling:
1.Heat the Ghee(clarified butter) in a frying pan and add the split
green gram and sauté over medium heat until cooked.
2. Add the grated coconut, coriander leaves, green chilies,
turmeric, chili powder and salt according to taste.
3.Now mix in the asafetida, ginger and cumin-coriander powder.
4.Stir and add the lime juice and sugar and cook for a few minutes
longer making sure that he mixture is little moist.
5. Add the seasonings according to taste and then remove from the
flame. Set aside and start preparing the covering.
For Covering:
1. Add salt to the
sieved flour and rub in the Ghee(clarified butter), add the semolina and
enough water to make stiff dough.
2. Keep the dough covered with a damp cloth for an hour. Now knead
well and divide the dough into equal balls/portions.
3. Roll each balls into a shape of small puri and put some of the
filling mixture in the center. Seal all the edges of the puri together
using little water.
4. Heat the oil until in a pan and deep-fry the kachories on medium
heat until golden brown.
5.Drain off the excess oil and remove the kachooris onto paper
towels.
